Well today was my 4th day as the boss today in the kitchen. Its been a lot of adjusting right now. There will be a lot of changes to come. I knew what I was getting into when I accepted the position. Tonight was a tough night. I made some mistakes and will learn from them. I have to remember that it hasn’t even been a week yet. They have gone through some tough times as a family together.
Right now is a tough time for restaurant owners. As an owner you try and keep your prep levels low enough when it isnt busy so that your not throwing product away. On nights like tonight you end up in a tight spot as it got busy.
I am looking forward to making some positive changes and moving forward with everyone. We will make it a summer to remember
