This is my braised pork shank with mashed potato carrots and beets.  Garnished with a fresh chive sprig. 
 

 

 

 
This was my Vanilla bean Panna Cotta with blueberry coulis and fresh mint for garnish
 
 
This dinner was planned by me for Jan 22/2016  I am now taking on the roll of running the kitchen at Thalassa and this was a good opportunity for me to show case my skills.
